Below is the recipe from my class, though you can opt for\u00a0a <a title=\"Tom Yum Goong soup recipe\" href=\"https:\/\/www.foodnetwork.com\/recipes\/tyler-florence\/hot-and-sour-thai-soup-tom-yum-goong-recipe\/index.html\" target=\"_blank\" rel=\"noopener\">Tom Yum Koong recipe <\/a>that doesn&#8217;t use any coconut milk as well.<\/p>\n<p><strong>Tom Yum Koong (Creamy Style)<\/strong> Serves 1-2<\/p>\n<p>1 lemongrass, cut into pieces<br \/>\n10 pc sliced galangal ginger*<br \/>\n3 kaffir lime leaves, torn in half<br \/>\n1 straw mushroom, trimmed and quartered<br \/>\n1 red bird\u2019s eye chili<br \/>\n\u00bd tomato, thinly sliced<br \/>\n1 c chicken stock or water<br \/>\n\u00bd c medium prawns, peeled &amp; deveined<br \/>\n2 T coconut milk<br \/>\n\u00bc T lime juice<br \/>\n\u00bd T fish sauce<br \/>\n\u00bd T nam prik\u00a0pow, roasted Thai chili paste**<br \/>\n1 T fresh coriander leaves, chopped<br \/>\n1 T green onions, chopped<\/p>\n<p>1. Put lemongrass, galangal ginger, kaffir lime leaves, mushroom, chili and tomato in chicken stock and bring to boil. Cook till tender.<\/p>\n<p>2.\u00a0Add the prawns, cook till tender.<\/p>\n<p>3.\u00a0Add coconut milk, lime juice, fish sauce and Thai chili paste.<\/p>\n<p>4.\u00a0Serve hot and garnish with fresh coriander and green onions.<\/p>\n<p>*There is no good substitution for galangal. We only had a couple days in Singapore to see the city up close and personal. Here is an inside view of one of the 3 soaring hotel towers.<\/figcaption><\/figure>\n<p>The $8 billion <a title=\"Marina Bay Sands\" href=\"https:\/\/www.marinabaysands.com\/\" target=\"_blank\" rel=\"noopener\">Marina Bay Sands <\/a>is the world\u2019s most expensive standalone casino property. The LV floating pavilion, being a glass structure, requires total and sophisticated sun control in order to sell the luxury goods.<\/p>\n<p>The museum on the other hand is of glass fiber reinforced polymer formed into sculptural shapes. It is a time consuming dish but the prolonged cooking of the rich spices in the coconut milk adds complexity to the flavors. It&#8217;s amazing to\u00a0bite into chunks of beef that are fork tender yet still retain a slightly chewy texture (no, it wouldn\u2019t hurt anyone&#8217;s dentures\u2026).<\/p>\n<p>After several failed attempts to replicate the recipe at home, I was bent on enjoying this labor intensive dish in Singapore. But when researching for this article, I found this\u00a0authentic looking\u00a0<a title=\"Beef Rendang recipe\" href=\"https:\/\/norecipes.com\/blog\/beef-rendang-recipe\/#sthash.EdeNEfnU.dpbs\" target=\"_blank\" rel=\"noopener\">beef rendang recipe<\/a> so maybe I&#8217;ll give it one\u00a0more try&#8230;<\/p>\n<p>I tried it at every opportunity \u2013 from the gentrified food stations at the Marina Bay Sands, to local hawker stalls in the city and found the tastiest morsels at a no frills establishment by an industrial park compliments of our birding guide. It consists of two blocks of restaurants lining the road with their ground floors open to the sea.<\/p>\n<p>Although chili crab and pepper crab are the two most popular dishes, all manner of seafood is available here fresh and is charged by weight.<\/p>\n<p>We chose Jumbo Seafood by virtue of its air conditioning in the upstairs section. It sounds silly but then at the end of a long sweaty day, I decided to rearrange my priorities. The food was OK given its popularity with tourists and sheer size. Naturally we\u2019ll be looking for other choices next time\u2026<\/p>\n<p>Considering chili crab is the defining Singaporean dish (right aside the iconic\u00a0<a href=\"https:\/\/eresources.nlb.gov.sg\/infopedia\/articles\/SIP_910_2005-01-11.html\" target=\"_blank\" rel=\"noopener\">Hainanese Chicken Rice<\/a>), here&#8217;s a recipe for <a href=\"https:\/\/www.linsfood.com\/singapore-chilli-crab-recipe\/\" target=\"_blank\" rel=\"noopener\">Singapore Chili Crab<\/a>.
