The first port is <a href=\"https:\/\/wikitravel.org\/en\/Manta\" target=\"_blank\" rel=\"noopener\">Manta<\/a>,\u00a0Ecuador. I\u00a0booked\u00a0a walking tour to the Pacoche forest, a wildlife refuge in the local area.\u00a0Nature tours for shore excursions\u00a0are challenging\u00a0as wildlife starts taking siesta by 10 am so early departures are critical. In our case,\u00a0the ship arrived on time at 7 am but thanks to port bureaucracy, passengers weren&#8217;t able to leave till 8:30. We stopped to see the San Lorenzo light house. At least howler monkeys, being extremely raucous and territorial, are reliable standbys. As if on cue, several started skirmishing right above our heads to allow us\u00a0a photo op.<\/p>\n<p>Towards the end of our park walk,\u00a0our guide asked if we\u00a0want\u00a0to check out the\u00a0resident bats. Things were finally looking up! So when\u00a0our\u00a0driver went to fetch the car, he took us to a dry aquaduct where a bat colony was roosting.<\/p>\n<p><iframe loading=\"lazy\" src=\"https:\/\/www.youtube.com\/embed\/hcTq2kiThII?rel=0&amp;showinfo=0\" width=\"560\" height=\"315\" frameborder=\"0\" allowfullscreen=\"allowfullscreen\"><\/iframe><\/p>\n<p>Our presence roused\u00a0the bats and eventually sent them fleeing out the opposite end. I had made advance request for a cooking class with <a href=\"https:\/\/modernfarmer.com\/2014\/05\/alpaca-red-meat\/\" target=\"_blank\" rel=\"noopener\">alpaca <\/a>\u2013 a meat though common in the Andes, is apparently pretty\u00a0rare on the coast. Fortunately the tour operator was successful in its quest so everything is a\u00a0go!<\/p>\n<p>We started with a trip to the market where Chef David got his day&#8217;s provisions. The stalls were piled high with exotic fruits and veggies, but none more impressive than these mondo ears of black corn. It&#8217;s equally delicious eaten with rice or French fries. We honored\u00a0the tradition of toasting\u00a0mother earth with a <strong>small\u00a0<\/strong>splash of Pisco Sour before happily digging into the feast.<\/p>\n<p>Both Peruvians and Chileans claim to be the originator of this\u00a0popular cocktail. There are slight differences in the ingredients used. The recipe below is the Peruvian version. Known for its trendy lifestyle, the area still retains much of its colonial and Republican architecture such as this historic landmark.
